Ingredients

  • 1 onion chopped
  • 2 carrots sliced
  • 2 cloves garlic minced
  • 1 cup canned diced tomatoes
  • 4 cups vegetable broth
  • 1 cup cooked beans white or chickpeas
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and carrots and cook until slightly softened.
  • Add garlic and cook briefly until fragrant.
  • Stir in tomatoes, beans, and vegetable broth.
  • Simmer for 15 minutes, season to taste, and serve hot.
