Ingredients
  

  • 2 cups vegetable broth
  • 1 cup carrot diced
  • 1 cup celery diced
  • 1 cup zucchini diced
  • 1 can diced tomatoes 14.5 oz
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • In a large pot, combine the vegetable broth, diced carrots, celery, and zucchini. Bring to a boil over medium-high heat.
  • Reduce the heat to a simmer and cook for 10-12 minutes, or until the vegetables are tender.
  • Add the diced tomatoes, salt, and pepper. Stir to combine and let simmer for an additional 5 minutes.
  • Serve hot, garnished with fresh herbs if desired.

Notes

For extra flavor, you can add a handful of spinach or kale during the last few minutes of cooking.
