Instructions
In a large pot, combine the vegetable broth, diced carrots, celery, and zucchini. Bring to a boil over medium-high heat.
Reduce the heat to a simmer and cook for 10-12 minutes, or until the vegetables are tender.
Add the diced tomatoes, salt, and pepper. Stir to combine and let simmer for an additional 5 minutes.
Serve hot, garnished with fresh herbs if desired.
Notes
