Instructions
In a large bowl, combine the watermelon cubes, cucumber slices, red onion, feta cheese, and mint leaves.
In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper to create the dressing.
Pour the dressing over the watermelon mixture and gently toss to combine.
Serve immediately or chill for 15 minutes before serving for extra refreshment.
Notes
For added texture, toss in toasted almonds or pumpkin seeds. You can also replace feta with goat cheese or vegan cheese alternatives.
