This salad with bell pepper and cucumber is a refreshing and easy-to-make dish, perfect for a healthy meal. The crunchy cucumbers and sweet bell peppers pair beautifully with a tangy sesame ginger dressing.

Ingredients
  

  • 4 mini cucumbers sliced
  • 10 mini sweet peppers sliced
  • ½ Tablespoon Everything But the Bagel Seasoning
  • 1 teaspoon Chili crisp

Sesame Ginger Dressing:

  • ¼ cup extra virgin olive oil
  • ¼ cup unseasoned rice vinegar
  • 1 ½ Tablespoons tamari or soy sauce
  • 1 ½ Tablespoons maple syrup
  • 2 teaspoons sesame oil
  • 1 large clove of garlic
  • 1 knob fresh ginger
  • pinch black pepper

Instructions
 

  • Make dressing by adding all the ingredients to a blender and blending until smooth and creamy. Set aside.
  • Add cucumber and bell pepper to a bowl. Add ¼ cup dressing, bagel seasoning, and chili crisp. Toss to combine. Taste and add more seasoning, chili crisp, or dressing if needed.

Notes

This salad is best enjoyed fresh but can be stored for 2-3 days in the fridge. Keep the dressing separate if you’re making it ahead of time to prevent the salad from getting soggy.
