Ingredients
  

  • 1 lb Brussels sprouts thinly shaved
  • 1/4 cup sliced almonds toasted
  • 1/4 cup parmesan cheese grated
  • 2 tbsp olive oil extra virgin
  • 1 tbsp lemon juice freshly squeezed
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper freshly ground

Instructions
 

  • Wash the Brussels sprouts thoroughly and remove any outer leaves. Trim the stems and slice them thinly using a sharp knife or mandolin.
  • In a large mixing bowl, combine the shaved Brussels sprouts, sliced almonds, and grated Parmesan cheese.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
  • Drizzle the dressing over the salad and toss everything together until well combined.
  • Serve immediately, or refrigerate for 30 minutes for extra crispness. Enjoy!

Notes

This salad can be made ahead and stored in the fridge for up to 2 hours. It's a great side dish or even a light lunch on its own!
