Instructions
Heat olive oil in a large pot over medium heat. Add onions and sauté until soft.
Add garlic and cook for 1 minute until fragrant.
Add chopped tomatoes, broth, salt, and pepper. Bring to a boil.
Reduce heat and simmer for 15 minutes until tomatoes are tender.
Blend soup until smooth using a blender or immersion blender.
Stir in fresh basil, adjust seasoning, and serve warm.
Notes
For a creamier soup, stir in a splash of heavy cream or coconut milk before serving.
