Ingredients
  

Base

  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 lbs fresh tomatoes roughly chopped
  • 2 cups vegetable broth
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1/4 cup fresh basil chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onions and sauté until soft.
  • Add garlic and cook for 1 minute until fragrant.
  • Add chopped tomatoes, broth, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer for 15 minutes until tomatoes are tender.
  • Blend soup until smooth using a blender or immersion blender.
  • Stir in fresh basil, adjust seasoning, and serve warm.

Notes

For a creamier soup, stir in a splash of heavy cream or coconut milk before serving.
