Ingredients
  

  • 4 cups vegetable broth
  • 2 cups carrots diced
  • 2 cups potatoes diced
  • 1 cup celery diced
  • 1 cup green beans fresh or frozen
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Place all the ingredients (vegetable broth, carrots, potatoes, celery, green beans, garlic powder, thyme, salt, and pepper) into the slow cooker.
  • Stir everything together to combine.
  • Cover and cook on low for 6 hours, or until the vegetables are tender and the flavors have melded together.
  • Once the soup is done, taste and adjust seasoning as needed, adding more salt or pepper if desired.
  • Serve hot with a slice of crusty bread or a sprinkle of fresh herbs on top for extra flavor.

Notes
