Ingredients
  

  • 4 cups fresh spinach
  • 1 cup cherry tomatoes halved
  • 1/4 cup croutons
  • 2 tbsp parmesan cheese grated
  • 2 tbsp balsamic vinaigrette

Instructions
 

  • Wash and dry the spinach leaves thoroughly. Place them in a large salad bowl.
  • Halve the cherry tomatoes and slice the cucumber. Add both to the bowl with spinach.
  • Add the croutons and grated parmesan cheese to the salad bowl.
  • Drizzle the balsamic vinaigrette over the salad and toss gently to combine.

Notes

This spinach salad can be paired with any light dressing of your choice. For added protein, you can top it with grilled chicken or tofu!
