- 1 tablespoon olive oil
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 bell pepper chopped
- 2 carrots chopped
- 2 celery stalks chopped
- 1 medium potato diced
- 2 cups smoked sausage sliced
- 2 chicken thighs bone-in and skinless
- 6 cups chicken broth
- 2 bay leaves
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup heavy cream optional
- Fresh parsley chopped (for garnish
1. Heat olive oil in a large pot over medium heat.
2. Add onions, garlic, and bell peppers. Sauté until softened, about 5 minutes.
3. Add carrots, celery, and potatoes, and cook for another 5 minutes.
4. Add the sausage and chicken thighs, and cook until browned on all sides.
5. Pour in the chicken broth, and add bay leaves, thyme, paprika, salt, and pepper.
6. Bring to a boil, then reduce heat and simmer for 1 hour.
7. Remove the chicken, shred it, and return it to the soup.
8. Add heavy cream (optional) and simmer for another 10 minutes.
9. Remove from heat, discard the bay leaves, and garnish with fresh parsley.
10. Serve hot with crusty bread or over rice.
For a vegetarian version, replace the sausage and chicken with beans or lentils. Use vegetable broth instead of chicken broth.
This soup can be made in advance and stored in the refrigerator for up to 3 days. It also freezes well for up to 3 months.
