Ingredients
  

  • 2 medium Tomatoes diced
  • 1 medium Cucumber sliced
  • 1/4 small Red Onion thinly sliced
  • 2 tbsp Olive Oil
  • 1 tbsp Red Wine Vinegar
  • 1 tbsp Lemon Juice
  • to taste Salt
  • to taste Black Pepper
  • 2 tbsp Fresh Parsley chopped

Instructions
 

  • In a mixing bowl, combine the diced tomatoes, sliced cucumber, and thinly sliced red onion.
  • In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, salt, and black pepper to create the dressing.
  • Pour the dressing over the vegetables and toss gently to combine.
  • Garnish with chopped fresh parsley for an extra burst of flavor and color.
  • Serve immediately, or refrigerate for 10-15 minutes to allow the flavors to meld together.

Notes

This salad can be served chilled or at room temperature. Feel free to add feta cheese or olives for a Mediterranean twist!
