Ingredients
  

Pasta Salad Base

  • 2 cups Tortellini cooked and drained
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Cucumber diced
  • 1/4 cup Red Onion finely chopped
  • 1/4 cup Bell Pepper chopped

Dressing

  • 3 tbsp Olive Oil
  • 1 tbsp Red Wine Vinegar
  • 1 tsp Dijon Mustard
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Cook the tortellini according to the package instructions, then drain and set aside to cool.
  • In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, and bell pepper.
  • In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
  • Pour the dressing over the pasta salad and toss gently to coat all the ingredients evenly.
  • Chill the pasta salad in the refrigerator for at least 15 minutes before serving to let the flavors meld together.

Notes

This tortellini pasta salad can be served chilled or at room temperature. You can also add grilled chicken or feta cheese for a heartier meal!
