Instructions
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until fragrant.
Add carrots, celery, cabbage, and zucchini. Stir well.
Pour in vegetable broth and bring to a gentle boil.
Reduce heat and simmer for 25–30 minutes.
Season with pepper and herbs. Serve warm.
