Ingredients
  

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 2 cups cabbage shredded
  • 1 cup zucchini diced
  • 4 cups vegetable broth low sodium
  • 1 tsp garlic minced
  • 1/2 tsp black pepper
  • fresh herbs parsley or cilantro

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and garlic, sauté until fragrant.
  • Add carrots, celery, cabbage, and zucchini. Stir well.
  • Pour in vegetable broth and bring to a gentle boil.
  • Reduce heat and simmer for 25–30 minutes.
  • Season with pepper and herbs. Serve warm.

This soup can be stored in the refrigerator for up to 3 days.
