Ingredients
  

Soup Base

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 potatoes peeled and diced
  • 4 cups vegetable broth
  • 1 cup milk or plant-based milk
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the onion and cook until soft.
  • Add garlic and cook for 30 seconds until fragrant.
  • Add potatoes and vegetable broth. Bring to a boil, then simmer until potatoes are tender.
  • Blend the soup until creamy. Stir in milk, season with salt and pepper, and heat through.
