Ingredients
  

  • 5 medium Potatoes peeled and diced
  • 1 medium Onion diced
  • 3 cloves Garlic minced
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1 cup Cheddar cheese shredded
  • 4 slices Bacon crispy and crumbled
  • 1 tsp Salt
  • 1 tsp Black pepper freshly ground

Instructions
 

  • In a large pot, heat some oil and sauté the diced onions and garlic until fragrant, about 3 minutes.
  • Add the diced potatoes, chicken broth, salt, and pepper. Stir to combine and bring to a boil.
  • Once the soup reaches a boil, reduce the heat to a simmer and cook for 25 minutes, or until the potatoes are fork-tender.
  • Use a potato masher to mash the soup to your desired consistency—smooth or chunky, it’s up to you!
  • Stir in the heavy cream and shredded cheddar cheese. Let the soup simmer for another 5 minutes until the cheese is melted.
  • Serve the soup topped with crumbled bacon and additional cheddar cheese.
