Instructions
In a large pot, heat some oil and sauté the diced onions and garlic until fragrant, about 3 minutes.
Add the diced potatoes, chicken broth, salt, and pepper. Stir to combine and bring to a boil.
Once the soup reaches a boil, reduce the heat to a simmer and cook for 25 minutes, or until the potatoes are fork-tender.
Use a potato masher to mash the soup to your desired consistency—smooth or chunky, it’s up to you!
Stir in the heavy cream and shredded cheddar cheese. Let the soup simmer for another 5 minutes until the cheese is melted.
Serve the soup topped with crumbled bacon and additional cheddar cheese.
