- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 1 1/2 cups sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 cups grated zucchini
- 1/2 cup chopped walnuts or pecans optional
- 1 package cream cheese for frosting
- 1/4 cup butter for frosting
- 3 cups powdered sugar for frosting
- 1 teaspoon vanilla extract for frosting
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line with parchment paper.
In a medium bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
In a large bowl, whisk together the sugar, oil, eggs, and vanilla extract until smooth.
Add the dry ingredients to the wet ingredients and mix until just combined.
Fold in the grated zucchini and chopped walnuts (if using).
Pour the batter into the prepared baking pan and smooth the top.
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely.
For the frosting, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth.
